Cold Beet Borscht

This is one of the easiest soups I have ever made!! I was a bit skeptical about it when I looked at the recipe, but it was a recipe of my aunt’s, so I decided to have faith & give it a try! 

Just 5 ingredients all added together & thats it. I just mixed it all up in a big bowl. This makes a lot of soup so I put some into a big jar & gave away the rest. I would say that this makes about 4 pickle jars full!

This would be lovely served at a summer dinner party! You can serve this soup in glasses so that your guests can drink if they are not sitting down to eat yet! Otherwise, serve it in bowls with a dollop of sour cream or plain greek yoghurt, or a plain boiled potato.

Here is the recipe

Ingredients

48 ox can of tomato juice

4 cups buttermilk

1/2 cup sugar

1/4 cup lemon juice *** I used fresh which was juice from 1 lemon

2 cans of sliced  beets *** you will be using the juice from the can so do not discard it

sour cream or plain greek yogurt to serve with the soup

or

cold boiled potatoes, cut in half

optional…dill for garnish

Method

  1. Put the the tomato juice into a large bowl
  2. Add the buttermilk
  3. Add the sugar
  4. Add the lemon juice
  5. You will be using the juice from the canned beets so drain the beets with a strainer but put the juice into the bowl & put the beets onto a cutting board
  6. Slice the beets & add them to the bowl
  7. Mix everything together until the sugar dissolves
  8. And thats it!!!

Serve with a dollop of sour cream or yogurt , you can sprinkle a bit of salt on, you can put some dill on…. or you can eat this with a bit of cold boiled potato, my mom used to put half a boiled potato in her borscht.

  1. I use this recipe but use a tin of lemonade instead of sugar and lemon juice and it’s delicious. Try it sometime.
