Spinach Broccoli Bake…..update

I was just talking to my sister this morning about this delicious dish! Sometimes I forget about the old standbys because I am looking at new recipes to put on this blog

I have not updated the recipe but just thought a re-visit would be good. The plan for dinner tonight is to have this Spinach Broccoli Bake some BBQ salmon & this will go perfect along side of it! I will add a salad & will have a delicious easy dinner. To see all the pictures for this recipe click on the link above!

Spinach Broccoli Bake

Ingredients

1 cup frozen spinach, defrosted and chopped  ***DRAIN  WELL otherwise your bake will be watery!! *** Or of course you can use fresh spinach…cook it first & drain well. If you use fresh spinach in this recipe it will be too watery

1 cup frozen broccoli, defrosted and chopped  ***DRAIN WELL

4 green onions, chopped

3 eggs, beaten

2 cups cottage cheese

1 cup grated cheddar cheese + 1/4 cup for the top

1/2 tsp salt

pepper

Method

Preheat oven to 350F

Grease a square baking dish

1.Mix all of the ingredients together except the 1/4 cup of cheddar cheese for the top

2. Pour into the prepared pan

3. Sprinkle the top with the 1/4 cup of grated cheddar

4. Bake for 50 minutes

5. Increase oven temperature to 400 F and bake for an additional 5 minutes
