Another recipe from Bon Appetit! This time it is for roasted eggplant, crispy kale, tomatoes & yogurt! We ate this just as is without anything else, but it would be excellent in a pita with some hummus…some falafel… with some fish….rolled up in a wrap… the possibilities are endless!

I think this might be the last energy ball recipe I try! This is the 4th on I have made to see which one I like best! I prefer the first one that I made… All of these little balls are a great snack, if someone wants something sweet without any added sugar. This chicken noodle dish can be eaten cold or warm. This comes together very quickly even though there are several steps to the reicpe. While the chicken is cooking, you get everything else cooked & then mix it all together & enjoy!
Funny thing about this recipe…It is called Cauliflower “mac & cheese” casserole. The person who was eating it couldn’t find any pasta….& was wondering where it was! But there is no pasta in this recipe. The cauliflower is chopped up into bite size pieces & is used instead of pasta

The recipe is for conversation heart cookies that look like the conversation candies that are out at Valentines Day. I did not decorate the cookies I made in that way.

I have not been to Vi’s for Pies, a restaurant in Edmonton, for many years. A couple of months ago we went with friends for dessert after eating at another restaurant. Then again, I was just there for a special birthday lunch with some friends.
So the big question was yesterday….if a recipe does not work for me should I blog about it? My son, Seth, said yes, So here it is.
