Passover Blintzes with Mrs. Shapiro

Here is a video of Mrs. Shapiro, she is in her 90’s, making blinttzes for Passover. Even if you never want to make Passover Blintzes the video is so sweet to watch! & you can always use the blintzes any time of year.

 

We did not fill them at her house so I took them home & filled them with sautéed vegetables for Jacki to take back home with her…she is here visiting for a few days. I love it when Mrs. Shapiro teaches me things! It isn’t just about the recipe, it is about her. She is so great, a good teacher of food & life.

The recipe for Passover Blintzes is

Ingredients

4 eggs, beaten

1/2 tsp salt

1 tsp oil

1 heaping soup spoon of potato starch

1 heaping soup spoon of cake meal

Sprinkle some potato starch in-between the blintzes to prevent them from sticking
