If you have some chicken pieces & you need to cook them & you go online or look through your cookbooks for an inspiration…you will find so many recipes. We eat chicken often so this blog will most likely be filled with many recipes. Hope you won’t mind! This recipe was inspired from one I found in my mom’s recipe box, which is full of good recipes. I did not have all the ingredients that were called for in her recipe, so I just used what I had handy. Turned out lovely. Sticky, sweet & spicy because I added Sriracha Hot Chili sauce!

Sweet & Slightly Spicy Chicken
Ingredients
1 cup up chicken
1 onion, diced
1/4 cup apricot jam
1/4 cup BBQ sauce, any kind you like
2 tbsp soya sauce
1 tbsp Sriracha Hot Chili Sauce
Method
- Put the cut-up onion in the bottom of a roasting pan
- Place the chicken pieces on top of the onion in a single layer
- In a bowl, mix the apricot jam, BBQ sauce, soya sauce & Sriracha Hot chili sauce together. Spread over the chicken
- Bake in the oven, at 350f, uncovered, basting often until cooked through & then bake some more, until the chicken is nice & crispy brown
