Tired of banana bread with chocolate? I just wanted to switch it up a bit
My fruit bowl had some bananas that were getting over-ripe and of course I decided to bake a banana bread, but without chocolate.
This recipe is from my aunt & she grates chocolate into it, which is really good. But I did not really want to add chocolate today.
I thought of icing it with a Maple Frosting. I adapted a recipe from the Martha Stewart website that I found for Maple Frosting & just changed it up a bit, then sprinkled some crushed walnuts on top while the frosting was still wet so they would stick! Let me know if you like this!

Banana Bread with Maple Frosting
Ingredients
Loaf Ingredients
1/4 cup butter, softened
1 cup sugar
2 eggs
1 tsp vanilla
1 cup mashed banana *** about 2 bananas
1/4 cup sour milk *** add 1/4 tsp of vinegar to 1/4 cup milk
1 tsp baking soda
1 1/2 cups flour
1 tsp baking powder
Frosting Ingredients
1 cup icing sugar
1 tsp melted butter
2 tbsp maple syrup
1 tbsp water, optional
crushed walnuts approx. 1/4 cup
Method
Preheat the oven to 350F
Grease a loaf pan
- Cream the butter & sugar together until well combined
- Add the eggs, one at a time, mixing after each egg
- Add the vanilla
- Add the mashed bananas, mix well
- Dissolve the baking soda in the sour milk, then add their stock the banana mixture
- Combine the flour & baking powder, then add to the rest of the ingredients
- Bake for approx. 45 minutes….check after this time to see if done and if not continue baking until a tester comes out clean
- Cool on a wire rack in the pan for 10 minutes, then remove from the pan and cool completely
- Mix the frosting ingredients together, I like my frosting to be on the runny side so it drips over the edges of a cake a bit so just see the consistency after adding the maple syrup, if you want it a bit more runny add the water slowly until you get the consistency you want
- Ice the cake with the frosting and then sprinkle the top with the crushed walnuts while the frosting is still wet.
