Leah’s Honey Mustard Chicken with Curry

When my mom passed away I took her recipe box home. There are some great finds in there.

One of them is this recipe for Honey Mustard Chicken with Curry. I have made a recipe like this before but without the curry. It adds a delicious flavor that brings this simple dish up a notch.

I have no idea where my mom got this recipe from but I am just going to put it in here and give my mom credit!

 Leah’s Honey Mustard Chicken 

 Ingredients

 3 lbs cut up chicken

1/2 cup liquid honey

1/4 cup margarine (I used 1/8 cup of oil)

1/4 cup dijon mustard

2-3 tsp curry powder

paprika

 Method:

 1. Place chicken pieces in a baking pan, single layer

2. Mix the honey, oil, Dijon mustard and curry powder together

3. Pour the honey mixture all over the chicken  I used a pastry brush to spread the sauce all over

4. Sprinkle with paprika

5. Bake at 350F until cooked thoroughly. Baste often

 I always like my chicken to be nice and brown ..hence being a bit dry but with pieces that doesn’t happen
